Spicy Mexican salsa

From street food stalls to fine dining restaurants and household tables, salsa is at the heart of Mexican cuisine. It ranges from mild to spicy, red to green and sweet to savoury. The most common ingredients include garlic, chilli peppers, onions, tomatoes and lime juice.

Danish pickled veggies

The Danish love pickled anything, stemming from the Vikings who preserved fish in salt and vinegar. These days, pickled products are still the foundation of traditional Danish food. North American sweet green relish

You won’t actually get arrested for it, but, many Chicago locals think it’s a crime to top your hot dog with ketchup. It’s a generous dollop of neon-green sweet pickle relish that cuts the mustard there. No one’s quite sure how it originated. One story is that the bright green hue stems from a happy accident with food colouring. Away from the world of hot dogs, sweet green relish is one of North America’s favourites.

Bring green life to your own dishes with our version of this chunky delight. Slather it on lamb and pork chops or add a sweet burst to burgers. Pretty up your cheese platter and don’t forget the camembert. You can even make a cracker look fancy with cream cheese and a dash of sweet green relish.

Bengali Kasundi mustard

Bengal’s most famous offering to the world of relish is eye-watering Kasundi, a condiment that transforms from ingredient to dip and sauce in a flash. Also known as Bengal mustard sauce, it’s typically made with a mix of brown and yellow mustard seeds and mangoes.

If you’re not keen on clearing your nasal passages with your condiments, mild yellow relish is the perfect alternative. Use it to add that all-important yellow streak to your hot dogs, for yummy ham and cheese toasties and mix it in with meatloaf.
